Bhel Puri Chaat (Spicy Crunchy Snack)
Materials-
• 3 cups puffed rice (murmura, crisp) available at Indian grocery stores.
• 1 cup fine sev (vermicelli-like snack made from hot flour) is available in Indian grocery stores.
• A cup of papdi, broken into small pieces (you can also make it at home, and can also buy from the market).
• Cup chopped boiled potatoes.
• Cup sliced cucumber.
• Remove the seeds of half a cup of chopped tomatoes.
• Two tbsp chopped coriander leaves.
• Tsp salt (adjust according to taste).
• Four tablespoon green coriander chutney.
• Four tbsp tamarind chutney.
• 1 Tbsp minced green chili optional.
For garnish
• A quarter cup finely sev.
• Two tablespoons lemon juice.
Way-
• First of all take a pan, put the puffed rice in the pan and fry it for three to four minutes, turn off the gas and let it cool down.
• Now mix the dry ingredients (puffed rice, sev, papdi and salt) together well. And keep it aside.
• Add chopped boiled potatoes, cucumber, tomato, cilantro and minced green chilies if you like hotter and keep aside.
• Now to serve, mix dry ingredients and potato mixture.
• Add chopped coriander and tamarind chutney to your taste, making sure that the chutney coats the bhel puri.
• Garnish with sev and drizzle with lemon juice.
Note: Assemble the bhel puri just before serving to avoid spoilage of the puffed rice and sev.
• Murmura tends to lose some of its crispness
over time. Roasting the murmura brings back its crispness and freshness.
