Indian Style Pasta

Components-

  • Pasta - 1 cup

  • Water - 4 cups

  • Onion - 1/4 cup (finely chopped)

  • Tomato - 1/4 cup (finely chopped)

  • Ginger garlic paste - 1 tsp

  • Green chili - 1 (finely chopped)

  • Chili powder/hot chutney - 1 tsp

  • Garam Masala - 1/4 tsp

  • Maida - 1 tsp-

  • Milk - 3 tbsp

  • Extra virgin olive oil - 2 tbsp

  • Salt - as required

  Description-

  • Take a deep pan, put water in it and heat it, then heat it till it comes to a boil.  Add salt and few drops of oil.

  • Add pasta (soft but hard), let it cook for 6-8 minutes.  Each shape of pasta cooks differently.  Check package for cooking instructions.  Be careful not to over cook it.

  • Now drain the water from it and keep it aside.  I usually like to reserve a quarter cup of cooking water in case I need to thin out the sauce.

  • Now heat oil in a pan.  When the oil is hot, fry the onions and green chilies till golden brown.

  • After this add ginger and garlic paste and cook for half a minute.

  • After this, now add tomatoes to it and fry the mixture till the tomatoes are mashed.

  • Now add all purpose flour and fry for a minute.  This is just to help give the sauce a consistency and coat the pasta well.

  • Now add rest of the ingredients like milk, chilli powder/chilli sauce, salt and garam masala.  If you don't like adding milk, substitute with drained cooking water instead.

  • Mix it well and check the seasoning.  It should be slightly salty and spicy so that it is perfect when we add pasta.

  • You can make this chutney ahead of time and add to pasta when ready to serve.

  • Lastly add pasta and toss well.  When all the pasta is coated with spices and it is heated well, then turn it off. (Do not heat it for a long time).

    Serve hot immediately garnished with green coriander on top.
