Mini Samosa Recipe

Materials:-

   Ingredients for Kneading Dough-

   • All purpose flour - 250 grams (1 1/4 cup)

   • Ghee - 60 grams (1/4 cup)

   • Salt - to taste (1/2 tsp)

   Ingredients for making stuffing-

   • Moong dal - 100 grams (1/2 cup)

   • Oil - 2 tbsp

   • Asafoetida - 1 pinch

   • Cumin - 1/4 tsp

   • Coriander powder - 1 tsp

   • Fennel powder - 1 tsp

   • Green chili - 2

   • Ginger - 1 inch piece

   • Red chili powder - less than 1/4 tsp (as required)

   • Garam masala - less than 1/4 tsp

   • Amchur powder - less than 1/4 tsp

   • Salt - to taste (1/2 tsp)

   • Oil - for frying the samosas


   Description:-

   How to knead the flour-

   • First of all sieve the maida, filter the maida and mix ghee, salt in it.  Heat lukewarm water and knead the flour with lukewarm water.

   • Keep the dough covered with a soft cloth for half an hour to set.  Dough for making samosas is ready.

   How to make stuffing-

   • Take Chilka Moong Dal.  Wash and clean the lentils and soak them for two hours.

   • To remove the skin of the lentil, rub it with your hands.  The skin of the lentils will float on the water, now take them out from the water (including the top water skin).

   • Filter the water by placing a sieve under the bowl and leave the lentils on it so that all the water drains out.

   • Now wash the lentils without adding water and add green chilies and ginger and make a paste in the grinder.

   • Take a pan and heat oil in it.  After the oil is heated, temper cumin, asafoetida and then add coriander powder, fennel and lentil paste.  Roast the dal while stirring it with a spoon.  Add red chili, garam masala, mango powder and salt.  Fry the dal till it becomes brown and dry.

   • The stuffing is ready for filling in the samosas.

   How to make Samosa-

   • Now take a small portion of the dough, roll it with hands in a circular motion, press it and roll it into a small flat disc of four inches thick.

   • Cut the disc into two equal halves in the shape of a half moon.  Take a portion and stick it in the shape of a cone with the help of water.

   • Fill this cone with a spoonful of filling.  After filling the material in the cone, place a plate on the bottom corner and stick both the corners with water.

   • Press the corners gently with your hand and close the corners.  Prepare all the rest of the samosas in the same way and keep them in a plate.

   • Take a wok and heat oil in it for frying samosas.  When the oil is hot, put ten to twelve samosas (or as many as can come at a time) in the hot oil and fry the samosas on medium flame till they turn brown.

   • Remove them from the oil and keep them on a plate covered with paper napkin.  Fry all the other samosas in the same way.  Your Moong Dal Mini Samosas are ready.

   • Serve hot crispy samosas with coriander chutney and sweet chutney, along with mint chutney.  Store leftover samosas in an airtight container and can be used for several days.
