How To Make Vegetable Kolhapuri Recipe
Veg Kolhapuri Recipe
Ingredients to make Veg Kolhapuri-
• Carrot- one
• Potato - one
• Capsicum - one
• Cauliflower - 1 cup
• Tomatoes - three
• Ginger - 1 inch piece
• Peas - one cup
• Cream - one cup
• Dry coconut - 1 cup grated
• Oil (as needed)
• Green coriander - two to three tablespoons
• Asafoetida - a pinch
• Cumin - one teaspoon
• Turmeric powder - one teaspoon
• Coriander powder - one teaspoon
• Whole red chili - two
• Sesame - one tablespoon
• Salt - as much as required
• Red chili powder - tsp
Method-
• First wash the vegetables, wash and cut the
vegetables into small pieces.
• Now put tomato, green chili and ginger in a grinder and make a paste.
• Now put a wok on the gas, put oil in the pan and heat it, then when the oil becomes hot, put chopped potatoes in it and fry on high flame till it becomes brown, and take it out in a plate, now put the cabbage in the oil and fry it in the plate. Take, in the same way fry carrots and capsicum and take them out in a plate.
• Now put cumin seeds in another pan and roast it on low flame, in the same way roast the sesame seeds (to brown them slightly). Now add coconut (grated) and fry it lightly. Now turn off the gas, take all the spices in a plate, cool the spices and grind them finely.
• Now put two teaspoons of oil in a pan and heat it, temper asafetida in hot oil, now add turmeric powder, coriander powder and fry the spices lightly. Add tomato and ginger paste also. Add red chili and fry. Add roasted sesame, cumin, coconut to it, and fry it, also add cream and fry for one to two minutes.
• Serve by adding green coriander, (if you want, put finely sev on it).
• Serve delicious hot curry.
