Khandvi Recipe 

Materials:-

   • 1/2 Cup all purpose flour (besan)

   • 1 Cup sour buttermilk

   • 1/4 Tsp turmeric powder

   • Salt (as needed)

   For Masala:-

   • 1 Tsp Til (Til)

   • 1/2 Tsp mustard seeds

   • 1/2 Tsp cumin

   • 3-4 Pieces green chilies, seeded and finely chopped

   • 10-15 Curry leaves

   • 2 Tbspsp grated coconut

   • 4 Tbsp coriander leaves (finely chopped)

   • 2 Tbsp oil

   Description:-

   • Take a big bowl, put gram flour, buttermilk, turmeric powder and salt in that cup and mix it well and make a smooth batter with the help of hand blender.

   • Now take a big plate or plate, grease its back side with oil and keep it aside.

   • Now put this batter in a heavy bottomed pan and cook it on low flame.

   • Keep stirring it continuously to avoid lump formation.

   • Cook this mixture until the mixture becomes thick.  It will take about seven to eight minutes.

   • Grease a plate or plate with oil and pour a tablespoon of batter into it.  Using a flat spoon or spatula, spread the batter in a thin layer.

   • Now let it cool for three to four minutes.  After cooling, make straight cuts with the help of a knife and make two-inch wide strips.

   • Now roll each strip carefully into a roll and put them in a serving dish.

   • Put two tablespoons of oil in a small tempering pan and heat the oil.  After the oil is hot, fry the mustard seeds, cumin, curry leaves and green chilies.  Lastly add sesame seeds (add sesame only when other spices are ready after frying).

   • Now put all this prepared masala over the Khandvi kept in a serving plate.

   • Sprinkle shredded coconut and chopped coriander.  Eat and feed with a spoonful of green coriander chutney, tomato sauce or garlic chutney.
