Crispy Dosa-
Ingredients to make Crispy Dosa-
~ 3.5 (three and a half) cups rice
~ Urad dal 1 (one) cup
~ Fenugreek 2 (two) tbsp
~ Bengal gram lentils 2 (two) tbsp (as desired)
~Ginger~ Oil for frying the dosa
~ Salt (according to taste)
Method-
• Leave it to soak in water for 3 to 4 hours. (let it be kept warm)
• Similarly, you can keep it overnight for soaking, this method is also good. But sometimes it has to be made suddenly, then it can be soaked for 1 hour also.
• After soaking, take it out and filter it, grind it in a mixer with salt and water, taking care that the solution should not be too thin, the solution should be slightly thinner than the idli batter, if the solution remains thick then add water to it can be diluted by adding.
• Keep this solution overnight till it doubles its size.
• Take a dosa pan and heat it. You can also use non stick dosa pan.
• Make the tawa so hot that when you sprinkle a few drops of water on the pan, it starts crackling immediately.
• Add 3-4 drops of oil and clean the pan with a clean cloth.
• Fill a ladle from the batter and put it on the griddle. Spread about 9 inch round dosa with the help of a spoon (from the back side) in a circular motion.
• Put a few drops of oil around the dosa.
• When it starts to turn a little brown from above and the edges start rising, then turn it on the other side and brown it.
• When it turns brown on both the sides, then remove it with the help of tongs or square spoon.
• Serve hot with chutney.
• Crispy dosa is ready.
