  Ragda Patties

 Materials

 ~ 1 (one) cup dried green peas / dried white peas.

 ~ 2 (two) medium onions finely chopped.

 ~ 6 (six) garlic cloves, minced.

 ~ 1 (one) teaspoon ground green chili and ginger paste

 ~ 2 (two) small potatoes, boiled and cut into small pieces.

 ~ 2 (two) medium tomatoes (finely chopped).

 ~ 1 (one) tsp garam masala powder

 ~ 1 (one) tsp red chili powder.

 ~ 1 (one) tsp dry coriander powder.

 ~ 1/4 (one-fourth) tsp turmeric powder.

 ~ 2 (two) tsp lemon juice.

 ~ 2 (two) spoons of jaggery or sugar.

 ~ 6 to 7 curry leaves.

 ~ 1/2 (half) tsp cumin powder.

 ~ 1/4 (one-fourth) tsp ground asafoetida.

 ~ 1/4 (one-fourth) tsp mustard seeds.

 ~ Salt (as needed)

 ~ 1 1/2 (one and a half) tbsp oil

 For serving-

 ~ 1 (one) medium onion (finely chopped).

 ~ 1 (one) tbsp coriander leaves.

 ~ 1/2 () cup sev.

 

  Method-

 • Wash dried peas and leave them to soak in water overnight or for 8 to 9 hours.

 • Take out the water from the peas and put the pressure cooker on the gas, put 3 cups of fresh water in the pressure cooker and add salt (as required) to it, put the peas in it, close the lid and cook on medium flame for 4 whistles or till the peas become soft.  Cook it.           

 • Do not drain the water from ripe peas;  Because use them with water if needed in the next steps.

 • Turn on the gas and heat oil in a pan on medium heat.  When the oil is hot, add mustard seeds and cumin seeds.  When mustard seeds crackle, add asafoetida and curry leaves and fry for about 12 seconds.

 • Now add chopped onion and fry till it becomes light brown.

 • Add minced garlic and chopped green chilli-ginger and fry for a minute.(till light brown)

 • Add chopped tomatoes and cook for about 3 minutes.  When cooked properly, add garam masala powder, red chilli powder, turmeric powder and coriander powder and cook for 30 seconds.

 • Add cooked peas (with water in the pressure cooker) and mix well.  Also add lemon juice and jaggery and mix well.

 • Let half the peas remain whole and mash half the peas with the back of a spoon and make it thick.  Add 1 1/2 (one and a half) cups of water and mix well.

 • Add chopped potatoes (boiled), add salt and mix well.

 • Now let it cook on low flame for 8-10 minutes or till it becomes thick.

 • Put it hot in separate serving plates and garnish each plate with chopped coriander, sev and chopped onions (can also add pomegranate) and serve immediately as ragda patties.
